Just a few questions about a pastry chef..?
I want to become a pastry chef that PLATES their desserts. Currently, I'm looking into the Culinary program at the Art Institute of Nashville, and am not sure what exactly I'm supposed to major under. Culinary Management or Culinary Arts with a concentration in Baking and Pastries. I've looked up a lot of information, but I can't seem to find anything that says what I major in to plate my desserts. I want to do something like Duff does on Ace of Cakes, just not only make cakes, or the Cake Boss does, and once again, just not only make cakes. So.. any pastry chefs out there that can help me? Just tell me what you like majored in so you could plate your desserts and all that. Also, I want to open my own pastry/baking shope as well. Help!
